On the origin of the Goose Brand


The family originally made the sauce just for themselves and their friends. Then her grandmother's sister and brother started selling their own versions in Si Racha, where it's harmonious blend of chilis, garlic, salt and vinegar appeals to both locals and tourists from nearby Bangkok. But the family never patented the name.
"We didn't want to keep it to ourselves," she says, adding that it wasn't much of a secret anyway — the ingredients were there on the side of the bottles for everyone to see. Soon there were dozens of imitators in Si Racha and beyond. Including, eventually, the Terminator of Srirachas, David Tran's famous Rooster brand.

"It's not tasty," she says, taking a sip of water. "It's not mixed together properly. There's only one taste." Saowanit says a proper Sriracha sauce needs to be what Thais call klom klom — the hotness, the sour, the sweet and the garlic all blending together seamlessly, none overpowering the other. The American version, she says, just brings heat.

#Japan sells threatened bluefin tuna for #sushi


The Kiyomura Corp., which Kimura runs, footed the bill at over $5,000 per pound. The fish usually sells for up to $40 per pound, though the price can fluctuate to more than $200 per pound. The gigantic tuna will translate to more than 12,000 pieces of sushi for the company's Sushi Zanmai chain.

But many environmental groups would argue the price is still too low, for a species that has floated ever closer to extinction. Experts say demand for Pacific bluefin has led to overfishing, causing stocks of the fish to fall to just 2.6 percent of their historic size.

The price we pay therefore is higher than payment could ever show to us. For God's sake, this kind of fish is threatened, he could extinct when he is still up for sale!

Conservation groups blame demand from the sushi and sashimi industry for the rapid decline in population. Japan consumes 80 percent of the world's bluefin tuna. Along with other countries including #Mexico, #Korea and the United States, it has exceeded its fishing quotas in recent years.

The usual misdemeanours, of course.

4 Easy Ways to Cut Down Your Sugar Intake - the body does not need added sugar and it is a primary driving force behind weight gain and Type 2 diabetes


If you’ve vaguely but assuredly “known” that the cause of the obesity epidemic in the United States is fats, you’re not alone.

You are, however, wrong.

The sugar industry has conducted a decades-long blitz to convince consumers that fats — not sugars — are the driving force behind America’s weight problem, The Times’s Op-Ed columnist David Leonhardt writes in their guide to quitting sugar.

But simple carbohydrates, particularly sugar, are the real culprits in the modern diet, and are the driving forces “behind the diabetes and obesity epidemics,” Mr. Leonhardt writes.

Cutting out sugar is easier than it sounds, and it starts with evaluating some of our most basic habits.

Part of the problem with "low fat" processed breakfasts was that by removing the fat they added sugar to make it taste better. I now eat a double fat non-sweetened plain yoghurt and add things like a banana to give it something extra. I ditched all soda drinks and moved to healthy proper ground coffee - which is way cheaper if you buy the beans and grind it yourself instead of going to Starbucks (who by the way sweeten many of their coffees). Basic choices like this go a long way and I have not put back on the 14 kgs that I shed over four years ago.

#Baked a #Birthday #Cake for my #Mom.. (\^u^).


The top cake is #vanilla and the bottom one is #chocolate, each cake has 2 layers of whipped #cream inside and they are coated in #homemade butter #icing, topped with real cherries and Milk Chocolate with Almonds was grated over it.

The vanilla was very moist. the icing started to melt while we were working on it and the whole thing was very heavy. (O_0*)

Okay everyone, time for a difficult conversation.




Most of the world's consumption of shortening-type fats involves killing and abusing animals. This means your buttery grocery items, listed below.


FYI These saturated fats are also the most common ingredient in soaps, which means most of the soap that people use comes directly from animal slaughter and abuse. They are also in countless other common food and household products.

What kind of fats am I referring to? Typically oils that take more heat to melt, including (but not limited to):
- lard - intentionally derived from slaughtering pigs
- butter - product of the dairy industry, which consists of constant forced insemination and ripping babies from their dairy cow mothers (the babies are killed and sold as veal)
- margarine - usually contains dairy which defeats the point of avoiding butter
- palm oil - vast majority of palm oil is sourced from mass deforestation of orangutan habitats with no consideration for their lives or homes (link 1; link 2; link 3)
- coconut oil - shockingly, coconuts are often harvested by monkeys used as slaves, especially in Thailand (link 1, link 2); fortunately this barbaric practice seems to be nonexistent in certain countries, however determining the source of coconut oil in a packaged product is often impossible
- vegetable shortening - almost always palm oil

The reality is heartbreaking, even sickening, but you know what's even worse? Being aware of this animal abuse while still continuing to consume these products.

So what you can do is STOP consuming these products (maybe with the exception of coconut oil specifically sourced from places with humans doing the harvesting instead of monkeys!). READ all ingredient labels. AVOID processed foods. And SHARE with others so they can change their habits and PROTECT animals.

Bauwagenküche am Sonntag:

Bulgur mit Linsen und Zwiebeln





Zutaten für zwei Portionen:- 375 g Zwiebeln
- Öl zum Anbraten
- 125 g Linsen
- 250 g Bulgur
- 50 ml Olivenöl
- 1/2 EL Salz
- 1/2 TL Pfeffer
- 1/2 Msp. Zimt

Zubereitung:

Ich habe die Zwiebeln in Ringe geschnitten und mit viel Öl in eine große Pfanne gegeben. Dann habe ich sie bei niedriger Hitze ganz langsam, es hat fast 40 Minuten gedauert, angedünstet. Immer wieder umgerührt, bis sie weich und goldbraun waren.




Zur gleichen Zeit habe ich die Linsen gekocht, bis sie zwar gar, aber noch bissfest waren. Den Bulgur hinzugegeben und mit kochenden Wasser übergossen, bis rund ein Zentimeter Wasser über den Linsen und dem Bulgur stand.




Olivenöl, Salz und Pfeffer dazugegeben und eine Messerspitze Zimt darüber gestreut. Alles für 20 Minuten auf kleinster Hitze stehen gelassen, bis das Wasser verschwunden war. Mehrmals umgerührt und nachgewürzt.
Danach mit den gebratenen Zwiebelringen und gehackter Petersilie garniert.

1 tasse 1/2 de farine de riz et 1 tasse de farine de châtaigne (je n'avais pas pas, j'ai mis riz et sarrasin)
1 c. à soupe d'arrow root
1/2 tasse d'huile neutre
3/4 de tasse de sirop d'érable
1 pincée de sel, 1 c. à café de vanille liquide

Peut aussi servir de pâte sablée pour tarte.

A Better Solution for Washing Fruit.


US researchers have found in a study, a method to better remove pesticides from the surface of fruit. The study found that washing fruit in only water did not really remove pesticides. The study showed that soaking apples, etc. in a solution of water and baking soda for 12-15 minutes would break down the pesticides which could then be washed off. The apples could then be placed in a bowl where you could give it another quick wash with only water before eating.
